Tired of French toast, pancakes and crepes? Try a twist that can be eaten plated or hand held. It’s like a pancake and a crepe got married and had kids.

Ingredients
  

  • ½ C flour
  • ¼ tsp baking powder
  • ¼ C buttermilk low fat
  • ¼ C almond milk
  • ¼ tsp cinnamon
  • 1 tsp sugar or sugar substitute
  • 1 tsp olive oil
  • 1 egg

Instructions
 

  • Whisk together ingredients.

  • Heat pan to medium-high. (Add some oil unless using non-stick)
  • Pour about 1/4 cup for each pancake.
  • Cook until bubbles form on the pancake and the edges begin to firm. Flip and cook until other side browns, about 2 minutes. The pancakes become golden brown and get a little cratered when cooked.
